感謝Liquid Assets的邀請,前晚榮幸為他們與龍皇舉辦的美酒佳餚宴嘉賓,品評葡萄酒與菜餚配對和分享品酒心得。當晚的菜和酒都極具水準,四款酒都有捧場客,尤其以2012年 Cascina Chicco Barbera d’Alba Bric Loira最受歡迎,足證酒商選酒有道。

葡萄牙杜羅區(Douro)的波特酒出色外,紅白皆有上品。我去年便受該區釀酒翹楚Douro Boys之邀,到該區參觀酒莊,有關感受已刊於我在《酒經月刊》四月號裡之拙文[五個革新的少年]內。

忙足兩週~一息尚存~再見Vinexpo

孩提時代,試過玩過「大被蓋過頭」的遊戲嗎?

年幼時的玩意總是無聊的,我便常常跟弟弟用棉被蓋頭,鬥長氣,誰可在被內呆得較久便贏;為了爭勝,在被內焗至缺氧也甘心 — 對對對,確很無謂,但說得冠冕堂皇些不就是挑戰自我極限麽?幾歲人兒頗有大志啊…  話是這樣說,那「缺氧至有點暈眩像快死再之後兩手扳開整張被後重獲氧氣和生命」的興奮很弔詭,倒久違這種感覺了。

剛過去的兩週我竟又重拾這感覺 — 那喘不過氣的感覺,是幅由無數個Wine Dinner + Vinexpo 工作+ + Wine Lunch + Wine Dinner + 會議+Wine Dinner+寫作+ 採訪工作+ Wine Dinner合共編織出來的大綿被,把我壓扁了;再經過今天的Acker Merrall & Condit拍賣會後回家午睡一刻,我重獲氧氣了。

小妹隸屬的International Wine Centre (IWC)是Vinexpo University唯一official教學機構,故這期間只參與了自家的多個Seminars和出席會議,有零星空閒時間又要忙於拍攝信報的webcast wine programme,試酒機會很少,略覺可惜。前晚出席Ponti在香港會的Wine dinner陣容鼎盛,多至廿餘款酒可供品試,奈何幾近虛脫的狀態叫我只能淺嚐 — dare not to stretch to limit!

今年的Vinexpo狀況如何,到過會場的你可能已很清楚;沒有參與的,其他bloggers也鉅細無遺的分享會後感,小妹便不再費周章描述了。但開心遇上很多很多朋友,在主要通道走路,原需五分鐘的路程,因不斷被叫住或碰到朋友/行家、而大幅擴展至廿分鐘,是每天的指定動作(在女厠內碰上熟人更多!)。總括說,我樂見洽商者中有許多內地商家;尷尬的是跟英國Decanter雜誌編輯Guy Woodward午膳時提到展覽何以充斥着那麽多非業內人士來狂灌。

2008 Les Vins de Roisin High Gastronomy Wine Dinner – 26/1/08

「九星連環」之82波都夜@香港遊艇會 – 21/12/07

踏入2007最後十天,我的工作稍為舒緩下來,但這不代表我不吃不喝,這晚就帶著「中量現金」* 和希冀心情,出席由Dee哥一手籌辦的1982波爾多橫式品試晚宴,一次過豪喝九瓶這個極具代表性的年份。我們十四位人士福星高照,九瓶中竟全無corked酒,可喜可賀!

Welcome drink 是1995 Baron Fuent Grand Millesime Brut Champagne (Double Magnum),氣泡已失(杯內及口裡),只好當乾白喝(註: 高質素的氣泡酒就算失去氣泡,也能保持味道,可以很好喝),酸度很高,有頗多酵母味,些少熱帶熟果味,中腔似有還無,餘韻卻略嫌短促。

品試分三部份,每輪用三欵酒對壘,我以整體結構、力度、果香、味道、平衡性及餘韻作主要準則,在每輪中選出最佳,然後再挑選最佳中的皇者。最終比拼結果則由牛頭角順嫂到富豪級人馬均趨之若鶩的Ch. Lafite勝出,Ch. Certan-Giraud榮獲亞軍,Ch. Branaire Ducru排名第三。

這Lafite之得我心,全仗其誘人的複雜性,力水足,且持久,是位高大威猛、風度翩翩的佳公子。「他」有典型的波爾多式動物毛皮味道、濃郁的成熟芝士香,加上末段的乾梅及檀香木味,教人享受不已。那毫不扭怩的天然酸度為酒的豐膄果味提供了強壯骨幹,餘韻剛勁悠長,絕對是切合了多年被封「名酒中之皇者」的盛名。

三輪比試排位如下,酒在人到齊坐好後才開,decant只為隔渣,由遊艇會的Sommelier Alan操刀:

首輪: Ch. Certan Giraud, Pomerol VS Ch. Labegorce Zede, Margaux VS Ch. Batailley, Pauillac

次回: Ch. Gruaud Larose VS Ch. Branaire Ducru VS Ch. Ducru Beaucaillou, All from St Julien

壓軸: Ch. Lafite, Pauillac VS Ch. Ausone, St-Emilion VS Ch. La Conseillante, Pomerol

我的亞軍是打頭炮的Certan Giraud,此酒跟masculine的Lafite剛好是個對照,是位耐看的高雅feminine女士,愈夜愈美麗。初段帶點青椒的辛辣香氣,未覺突出,入口見真章,香草、花香四溢,丹寧圓潤,酸度恰到好處,餘韻柔滑且長。持久力佳,擺放愈久花香愈見迷人。

穩守季軍的Ch. Branaire Ducru勝在味道濃郁(不錯的香料、肉桂等味)的同時,結合了適中的酸度,絲般幼滑的細緻丹寧,成了一杯體態均勻、有層次的成熟紅酒。最後以頗長的收結作謝幕也是她晉身三甲的重要一環。

不得不讚的,是那比各大主角年輕十三載的女配角,即臨完場才出來的甜姐兒: 貴腐霉(Noble Rot / Botrytised)甜白酒1995 Ch. Coutet Cuvee Madame, Barsac。酒甫下杯便可聞其蜜糖芳香,入口有豐盈的鳳梨及水仙花味。味甜而不膩,也多得那充足而不搶味的酸度,正好讓酒嬌柔但實牙實齒地展示她的風姿,餘韻很長,此酒該可多陳藏十年仍不失果味。

整體說,九瓶酒均屬上乘之物,只是今時今日價錢屢被扯高,用每口千多元的代價去「享受」這羣上了神枱的珍品,是否真的物有所值呢??

* 由於各酒主均是以成本價分享美酒,遊艇會食物價錢亦reasonable,是故今餐只耗費中量現金,非常超值
 

花絮:

Lafite酒主錢總飲至尾段,傾談間忽地連人帶椅的向後跌,由於事出突然,我和Dee在他身旁都被嚇呆了,也未懂伸出緩手(認真Sorry!!);幸好平日「騎馬多過行路」的他訓練有素,敏捷的在差不多着地的一刻彈跳回來,坐着的木椅瞬間變成廢柴,被「移屍」到尾房,下為殘駭及無面見人的事主:
