Dr. Au-Yeung準備了一糸列的德國白酒搭配雪園上海菜,聽說此店做的菜比其他店好,一於試試。

1999 Burg Layen Schlosskapelle Kabinett, Nahe  Magnum

淺檸檬黄色,香氣頗濃。有gooseberries、花香水、玫瑰香;入口有香草、琵琶、少許蜜糖。輕身酒,夠酸度,微甜。低酒精。

2003  J.J. Prum Wehlener Kabinett, Mosel

淺檸檬綠色,濃重熱帶水果、石榴味,很年青。入口中甜,高酸度,輕盈酒體:菠蘿、熟萍果。餘韻不俗。低酒精。

2005 Fritz Haag Brauneberg Juffer Sonneneuhr Spatlese Trocken, MSR

不久前在新舊世界對疊@KCC – 29/12/06才喝過,淺檸檬綠色,水漾邊,有少量氣泡沉杯底。年青,中濃香:白花、蜜糖;乾身,中酸,有青檸甘苦味,帶石榴、大樹菠蘿、萍果和肥皂味。酒精適中,收結中長。

1997 Chateau Canon la Gaffaliere, St-Emilion Bordeaux

中度紅寶石色,石榴石色邊。中量頗成熟果香:很討好的紅櫻桃,另有明顯橡木、松香味。入口乾,中型酒體,味濃:紅櫻桃、橡木貫徹。有層次有複雜性。收結中長。

2003 Gunderloch Jean-Baptiste Kabinett, Rheinehessen

淺檸檬黄色,水漾邊。香味濃:香精、糖果、花,帶少量礦物及蜜糖。中乾身,中高酸,輕盈酒體:柑橘、青檸、菠蘿、熟萍果。低酒精,有餘韻。

2001 Dr Loosen Erdener Treppchen Auslese, Mosel-Saar-Ruwer

淺檸檬黄色。發展中香味:濃重到不得了的菠蘿味,另有一些萍果香。中甜口,中酸度,中型酒體,中濃:繼續是菠蘿+萍果。低酒精,長收結。猶如喝菠蘿汁。

2004 Gunderloch Nackenheimer Rothenberg Auslese, Rheinhessen

中檸檬黄色。發展中香味:杏甫、杏霜。入口中甜身,中酸,中型酒體,果頗濃味:菠蘿、梨子、杏甫、少乾花。低酒精,頗長收結。

2003 Baltheser Ress Hattenheim Schutzenhaus Kabinett

淺檸檬綠色。中濃正發展香味:白花、汽油。中乾身,高酸度,輕至中型酒體,中濃:梨子、香水、萍果。低酒精,收結長。很爽的酒!

1981 St Hildegardshof Bingen Bubenstuck Beerenauslese

全晚的賣飛佛:淺琥珀色,黄褐色邊。成熟濃香味:杏甫、焦糖、少萍果乾和菠蘿乾。甜身,高酸度,中型酒體,中濃:橘子、亁果、蜜餞。低至中酒精,長收結。廿六歲,正值壯年;均衡且不膩,我很喜歡的甜酒款。
